Below you'll find samples of Sage & Swift's wedding menus, intended to spark some of your own ideas. Tell us about your favorite things to eat, and we’ll create a delectable meal for you and your guests.
A Late Summer Garden Party
Specialty welcome drink as guests arrive at the reception:
• Planters punch
• Southern limeade
Passed hors d'oeuvres:
• Homemade corn crisps with an artichoke leaf topped with a dollop of crab salad
• Pecan cheddar coins filled with red pepper jelly
• Fried okra with remoulade sauce
• Crostini with pesto spread and topped with grilled spicy shrimp
Buffet dinner:
• Rabbit, sausage, and crawfish jambalaya with Creole sauce
• Shrimp, local tomato, avocado, and fresh corn salad flavored with basil and grape tomatoes
• Late summer salad with baby fennel, goat cheese, and croutons with a blackberry vinaigrette
• Steamed haricots green beans with bacon and spiced pecan pieces with garlic persillade and with cherry vinaigrette
• Pork tenderloin served warm atop roasted fingerling potatoes and topped with grillade
• Dinner rolls and corn muffins
Desserts:
• Strawberries and melon with chocolate dipping sauce to put out after dinner buffet
An Asian Inspired Buffet Supper
Passed appetizers:
• Steamed shrimp dumplings with ginger soy dipping sauce served in a Chinese soup spoon
• Lemongrass-skewered beef tenderloin skewers with mango salsa and mango barbecue sauce for dipping
• Mini crabcakes with roasted garlic aioli and traditional cocktail sauce
Served first course:
Late summer salad with baby lettuces, spiced pecans and roasted early fall vegetables in a light balsamic vinaigrette
Buffet dinner served on the terrace:
• Pan-seared salmon with a horseradish crust on a bed of julienned vegetables
• Small chicken breasts in a thai coconut milk broth with basil served on a bed of wilted greens and snow peas
• Shitake mushroom risotto cakes with parmesan and chives
• Steamed asparagus with roasted red peppers and roasted garlic with a light sesame and soy dressing on the side (some wilted greens and julienned vegetables served in bowls on the side so guests can have extra vegetables and vegetarian guests have more options)
